Another great eggplant recipe is Paula Wolfert's Chicken with tomato eggplant "jam". It's a Moroccan recipe and I'll post it if you are interested. It's truly delish and the eggplant melts into the sauce and can't be distinquished as eggplant. I've served it to raves from a couple of people who don't like any veg very much and hate eggplant.

Usu. either serranos or Thai chili (aka Thai bird chili or prik chi fa) are used when a recipe calls for "green chili". Green chili peppers are added for their heat, and not necessarily just for color or sweetness, which is why green chili peppers like poblanos are not used.
I'm making carnitas for an upcoming potluck----but I've never had them before what sort of toppings are most typically served. I'm leaning toward a fresh salsa, cabbage and avocado. I don't really want to go all out for this it's a work thing, just the basics.

I have a small, illustrated booklet of Plenty and tried a veggie tart last night for dinner. Despite some mishaps that I caused by not tossing out the foil container for beans (pie weights) before it disintigrated and fell all over the place, knocking over the tart case so that I was forced to piece it back together, this was a delicious dish.

Captivated by the soufflé-style omelettes of Mme Poulard, I've been playing around with hand-whisked omelettes for the last few days and wonder what secrets people have to make them light and fluffy? I've got my copper mixing bowl and balloon whisk -- and things are improving! -- but I'm far away from an MP soufflé. (Latest attempt pictured.)

Ok---so my friend who is doing Weight Watchers told me about this recipie to make a 1 point treat. It is simply 1 can diet soda + 1 package cake mix (any kind) mix together, pour into muffin tins bake at 350 for 20 mins or so and voila a 1 point cupcake.

In one store, it's a very thin (maybe 1/4 inch) cross section cut that has three or four slices of bone in it - those are great for marinating and grilling as ricepad suggested. In another store, it's a single long bone with a large chunk of meat attached - those can be roasted as you suggested or braised, bbqed, etc.

I make the spinach-feta stuffed mushrooms from the original Silver Palate and they are really good. You can make the stuffing as far ahead as you like and freeze it. You can stuff the mushrooms earlier in the day and just bake them as needed. One tip for this recipe: just lightly stuff the mushrooms, don't pack the stuffing in.
