Another great eggplant recipe is Paula Wolfert's Chicken with tomato eggplant "jam". It's a Moroccan recipe and I'll post it if you are interested. It's truly delish and the eggplant melts into the sauce and can't be distinquished as eggplant. I've served it to raves from a couple of people who don't like any veg very much and hate eggplant.

We are cooking two 6-7 pound bone-in, smoked (not pre-cooked) butt portions. They need to be cooked at 250 because there's only one oven. The powers-that-be seem to have decided that 325 is the magic temperature for ham, and after googling and asking my grandma, I'm coming up empty.

A few months ago I had a fabulous Arros con Rabo de Toro at the Bodegas Campos Taberna in Cordoba. Now that I'm back in the U.S. and a snowstorm is about to hit, I would like to be able to replicate something like this dish. I know how to cook rabo de toro, but I'm not sure how to do it as a rice dish in a paella pan.

I created a Texas-style dry rub from a recipe I found online and it's been sitting in the rub since Wednesday. I don't have a BBQ, smoker, or meat thermometer but I do have an oven. I was hoping to put the brisket in the oven at around 225 degrees F and let it slow-cook for several hours.

Usu. either serranos or Thai chili (aka Thai bird chili or prik chi fa) are used when a recipe calls for "green chili". Green chili peppers are added for their heat, and not necessarily just for color or sweetness, which is why green chili peppers like poblanos are not used.

I have a small, illustrated booklet of Plenty and tried a veggie tart last night for dinner. Despite some mishaps that I caused by not tossing out the foil container for beans (pie weights) before it disintigrated and fell all over the place, knocking over the tart case so that I was forced to piece it back together, this was a delicious dish.

Last time I had some, I pulled my usual routine of whisking together three parts olive oil to one part hot chile oil, some salt and pepper, and a pinch or two of herbes de Provence (very optional) and letting the fish sit in that for an hour or so at room temp, then giving it a couple of minutes per side in a hot-hot iron skillet.
